Roasted Veggies and Chicken Bowl Recipe

This meal is an absolute STAPLE in our house. It's an easy recipe and completely stays on a paleo diet plan. 

Veggies

2 large sweet potatoes (cut up into cubes)

1 broccoli head (cut up into florets)

1 lb of brussels sprouts (cut into fourths)

½ cup of olive oil

4 garlic cloves (minced)

2 tbsp ground cumin

1 tbsp garlic salt

1 tsp salt

Sprinkle black pepper

Mix all ingredients together and throw it on a baking sheet and into the oven at 400 degrees for 40-45 minutes.

 

Shredded Chicken

3-4 chicken breasts

½ lemon (sliced)

Salt and pepper (to taste)

Put all things into a pot with water. Bring to a boil. Let simmer for 14-16 minutes. Take chicken out of water and let cool. Shred it with two forks.

 

Aioli

1 can of coconut milk (full fat)

1 whole avocado

1 garlic clove

½ lemon juice

Salt and pepper (to taste)

Blend it all together in a food processor. Done. Boom.
